Xerotigana

Traditional xerotigana are the well-known δίπλες that are made at Christmas and New Year. Moreover, they are offered at weddings and baptisms together with Amorgian pasteli. As defined by their name, Xerotigana are folded into various shapes (such as the shape of a rose), and then sprinkled with local honey and decorated with sesame seeds.

Annual festival Xerotigano Amorgos

Every September, usually in the first week, the annual Xerotigan festival is organized in Aegiali! This evening is special dedicated to this dessert, while the women of the villages present live to the public the whole production process of xerotigano.

After that, an authentic traditional Amorgian feast with music, psimeni raki and dance, occurs.

The event is held by the youths of Aegiali in collaboration with the Cultural & Environmental Association "Ancient Vigla".

It is also worth mentioning that there is already a large number of xerotigana able to cover the number of attendees of the related event.

Xerotigana recipe Amorgos

For a small quantity you will need:

  • 1kg flour
  • 1 cup oil
  • 1 teaspoon sugar
  • A little salt and 1 to 1.5 glass of water.

This way, the recipe will get the hardness it needs.

Then, place the dough in the machine so as to take the shape of a dry frying pan and then fry in hot oil, and add honey and roasted sesame.
